From within a tile matching layout, select 'Options|Game...' from the menu. (You may want to pause your game first.)

On the first ('Tile Matching') tab, uncheck the 'Use Depth Shading' checkbox. All of the other shading options are there as well, so you can find which combination/colors you prefer.

I hope this helps. :-)

The checkbox is on the dialog entitled "Game options", reachable with Options->Game->Tile Matching tab. Make sure you don't go down the Options->Options route.

The 'Tile Matching' tab is the default tab when you open the game options ('Options|Game...') from within any layout. (The other tab is the name of the layout, for adding/removing the individual layout from your favorites.)

As mentioned, it is possible that you are opening the global options dialog by accident. It is also possible that you are trying this from within the wrong game. If you tell me the text on the default tab of the dialog box you are getting, we should be able to identify the issue.
